Baby Steps

Here is What I'm Loving Today!




LOVING that I was finally able to capture a video of Tirzah walking!!  This was from yesterday.  She is walking all the time now!





LOVING that she can't help but go where her feet take her... she has no sense of directing herself yet


LOVING the way she holds her arms up, for that extra support and balance

LOVING the victory He has granted over frustrations with her naps!  This truly is a huge area where He has worked and I am SO thankful!  I have not known the despair for several weeks and I am humbly grateful for His victorious work.  Baby steps each more every day giving thanks for all things: even short naps.


LOVING this simple yet delicious recipe for chicken.  I just pulled a batch out of the oven, for this afternoon's activities will leave not a moment for dinner preparation.  I think I will serve it over barley, to add some whole grain goodness and crunch.

Chicken bake with Potatoes, Thyme, and Lemon

Preheat to 450

Place together in a 9x 13 pan:

3-3 1/2 Lb. Chicken (our favorite is with thighs, but I just made it with Organic drumsticks and it looks great)
1 Lb new potatoes- halved or quartered
1 red onion cut into chunks
1 head of garlic, cloves separated and unpeeled (the recipe calls for unpeeled, but I peel ours... more time at the prep but definitely more enjoyment in the meal!)
1 lemon, quartered

Mix together: 1/4 c olive oil and 2 T balsamic vinegar (I am a total sauce girl so I usually double this for one batch: leaves lots of delicious juices!)

Pour vinegar mixture evenly over all the ingredients and sprinkle with:

Salt
Pepper 
Thyme (this is what makes the dish!  We use ground, but fresh sprigs would be delicious as well)

Roast about 50 minutes until chicken is nicely browned and potatoes are tender

  1. Zion Covenant- favorite series ever!! You will love it! Cannot believe she is walking like this. Just impossible. I will try the chicken. Can't wait!
