Today I am just going to touch briefly on the pig slaughter.... And will share a few pictures. Truly? It was an incredible
Experience and both Daniel and I are excited to do it again! We learned so much, some moments were hard to watch, and the smell was absolutely awful... But I can't even begin to describe to you how delicious the meat is! And we haven't even tried the bacon yet as it is still curing! Tirzah was amazing through the whole experience, like it didn't really phase her. But it has been an opening to such wonderfully deep questions with her: about ethics and foods God has given us and why we "die" animals. Pretty amazing.
Never before have we had so much meat on our hands and I LOVE being able to go out to the freezer and choose a cut of meat. I am so thankful for that bounty! We didn't do blood sausage or use the organs, but we have loved making broth from: yes, the trotters and even the tail. And the first meat we served was the head! To a group of fathers and sons who had spent days on the hiking trail, it was the perfect crowd pleaser, but would not have gone over well with anyone else! So we made broth by simmering the head (that was weird!) but delicious, and we have even been rendering lard to use in baking and sautéing. Such an abundance!
