Chore of the day: harvest the rest of the beets as the greens are starting to wilt. Store them for roasted beets and or juicing.
Beet greens are one of the goats' most favored treats.
My favorite chore is to water the garden. Sometimes with Tirzah sitting on my hip, boots dangling, and sometimes alone with just the birds for company. I love the peace and the quiet and those first rays of sunshine.
Favorite times to be in the garden: about 8 in the morning before the sun gets too hot and then again around 6 when the sun is no longer fierce and there is a cool breeze.
I love to see Rudy and Tirzah run and frolic together. I think he must believe she is a goat too. They are such good buddies, as they run to and fro together. Then Rudy will tuck his head down and press into Tirzah's tummy to try his strength and play as only a goat can (ever so gently with her) and oh how it makes her giggle to play this game.
A satisfying feeling: bringing in a beautiful nights work: a basket full of nutritious abundance.
Stacked Vegetable Quesadillas. Yum. Served alongside sautéed chard and avocado slices.
Sautéed onion, carrot, peas, potato, and broccoli.
Placed on top of a tortilla and topped with cheese.
Yet another layer of vegetables and cheese and one last tortilla.
Baked at 400 for 20 minutes. Simply Summer.
